Breakfast Sandwiches

Hubby wakes up every morning at 5:30 a.m. or earlier and drives about 1.5 to 2 hours to go to work.  When I first moved back in with him, after our wedding, I was waking up with him, to prepare him a nice breakfast, and pack his lunch and snacks.  I felt the need to support him through his hardship, and I was happy to do it.  
Unfortunately, after a few months, I have to admit that I was really tired, and could not find the strength to wake up so early anymore... :(  Sorry Babe...

This recipe of breakfast sandwiches was the perfect compromise!

I used Taralynn Mcnitt's recipe of her Breakfast Sandwiches To-Go All Week Long ~click on the link to find her recipe!~ and added my twist to it.

Ingredients for 6 Sandwiches:

- Mini Peppers (3)
- Spinach (1 bowl full)
- English Muffins (6)
- Eggs (3 full and 3 whites only)
- Shredded Cheese (1 cup)
- Salt & Pepper (for taste)

Also needed: 
- A muffin/cupcake pan 
- A Forman grill/panini grill or Croque Monsieur grill ~for my French family!!~

Directions:

~Preheat oven at 350.~

1. Break the eggs in a mixing bowl.
2. Whisk the eggs with a fork.



3. Dice the peppers.
4. Cut the spinach leaves in thin slices.



5. Add the peppers and spinach to the eggs. 
6. Add salt and pepper. Mix together.



7. Lightly coat your muffin pan with oil.
8. Divide your eggs and veggies mixture in the pan.  



9. Bake in the oven at 350 degree for approximately 10 minutes.



10. Let the eggs cool down.



11. Once the eggs are cool, gently take them out of the pan with a soft spoon.  I used a silicon spatula, it worked pretty good.



12. Slice the English muffins open.



13. Place the breads on the grill, add the egg mixture in the center and top with shredded cheese.  Place the top of the English muffin, and close the grill.

14. Let them cook for about 5 minutes or until the bread is browned.
~Repeat step 13 and 14 as many times as you have of sandwiches!~


15. Let the sandwiches cool down completely. 



I thought Taralynn had such a great idea to put some colorful labels on the little packages, so I did the same!
On some of the labels, I also wrote a sweet message to my Husband, to make him feel like I was still making his breakfast every morning!! ;) 
I also wrote the days of the week in French so that he could see and learn them!




Finally, make sure to wrap the sandwiches up.  I used wax paper, and taped the bottom.
Once they were completely cooled, I put them in the freezer. 



Every morning, Hubby took one out and put it in the microwave for about 2 minutes ~without the wrapping paper~ while he was getting ready.
Perfect healthy breakfast!
